Prendono il nome dalla maschera Bolognese del Dottor Balanzone. 

Un tempo venivano consumati durante il periodo del Carnevale. I Balanzoni e il Dottor Balanzone, sono entrambi ben torniti e tondeggianti come la cucina tipica Bolognese, espressione di eccellenza e abbondanza. Sono conosciuti anche con il nome di "tortelli matti“a causa della particolarità nata dall'unione del ripieno dei tortellini con la ricotta dei classici tortelloni.

These take their name from the Bolognese mask of Dr Balanzone. 

Once they were eaten during Carnival. Balanzoni pasta, and the Dr Balanzoni mask, are both shapely and rounded, like typical Bolognese cooking, an expression of excellence and abundance. They are also called "mad tortelli", because they are a special combination of the filling used for tortellini with the ricotta of classical tortelloni.
