A cooked ham made as "once upon a time", with raw materials strictly selected from heavy Italian pigs. The production process is highly artisanal: the thighs are carefully de-boned by hand to maintain the anatomical shape, then sewn and tied by hand, placed in linen sheets for slow steam cooking. The traditional Ferrarini brine based on 21 aromatic herbs is a must.
