Visually, it appears of a uniform straw yellow color with numerous tyrosine crystals that suggest the high seasoning. The product releases a very strong odor, characterized mainly by notes of melted butter and dried fruit. The aromatic complexity is extraordinary; during the tasting a great variety of aromas is distinctly perceived: melted butter, meat broth, dried fruit and nutmeg. Despite the long aging, the cheese maintains a high sweetness, with a very slight bitter scent and a slight spiciness. On the palate it is possible to appreciate a very friable and soluble well-formed grain.
