Since 1865 Caseificio Defendi, an Italuan family-run company, has been producing and ageing soft PDO and high quality cheeses typical of Lombardy dairy tradition as Gorgonzola dolce and piccante, Taleggio, Gorgonzola and mascarpone, Crescenza-Stracchino, Italico and buffalo cheese specialties: Baffalo Blu, Bufaletto and Camembert di bufala. An organic range is also available.
