Cantorì is made from a selection of the finest bunches of Verdicchio grapes, coming from selected areas of vineyards with a soil mainly sandy, and very favourable micro climate.
Fully ripe grapes are selected by hand with several passes in the vineyard. The harvest is by hand and is done only in the early morning. The whole cluster is immediately soft-pressed and is selected only the highest quality juice. Fermentation takes place in stainless steel at controlled temperature for about 10 months.
Cantorì can be preserved for several years.
Limited production, numbered bottles. In 2016 has been produced 2600 bottles.
